Just set the HSB Saturation to 0% and select the option dot in front of the Brightness, and vary the Brightness% or drag the vertical scale slider. You could do the same with Lab but you’d need to set a and b to zero and vary L.
You can also use the Color palette set to Grayscale Slider and Grayscale Ramp.
On the Mac, you can select the Apple Color Picker from Preferences > General. That has an option for a Grayscale slider.
Not sure whether Windows gives you more than the Adobe Color Picker. It probably gives you a choice between Adobe and Windows. If it does give you a choice, try the Windows version to see if it gives you a Grayscale option.
I suspect the Color palette is the best bet.
