When I apply the filter menu to a picture it makes everything craquelure and I can;t undo it. Is there a way to set the defaults for filters or did I do something else wrong?

What do you mean with ‘the’ filter menu? This menu consists of many filters, so depending on the submenu you choose you can indeed get a craquelure filter. If you mean the Filter Gallery; just choose the filter you want to use.
