Can’t save as EPS

I have Adobe Photoshop CS2 on Windows XP Pro. I am trying to save a flattened file as an EPS file but I do not have EPS as one of the Save As format options. Any suggestions?

Change the mode from 16 bits/color to 8 bits/color.
