Can anyone tell me how to set a stroke (on a path) to be hard and clear? I can get a good outline if I press stroke 5 times but then of course it expands.

Photoshop is an application designed to manipulate raster images, its vector tools are minimal. Illustrator is a vector application and it vector tools are second to none.

You just won’t get first class results in vector work using photoshop

Try using the pencil to stroke the path instead of a brush. This will give you a very dark, pixilated stroke.

or, you can change the outside/inside/center options. That may help.

WISHLIST: Photoshop should have anti-aliasing settings for vector shapes and outlines like they have for fonts.

And, before you Stroke the Path, set the Brush Size (Pencil Tool, as Mike suggests) to that which you want. If it is too thin, then Ctrl-Z and adjust the Brush Size up a pixel, or two.
