I want to use just an object or two, and make the rest of the scene black, how is that done?

There are probably many ways of doing it. Make a duplicate layer, paint that layer black, then reduce the opacity so you can see the underlying image, then use the history brush to paint out the black overlay.

Select the object(s), then do Select > Inverse, then do Edit > Fill and for contents select black.
